Camp Recipe – Corn and Tuna Pancake

Here’s a great camp tucker recipe from my wife and refined for outback use by myself.

Corn and Tuna Pancake

Corn and tuna pancake ingredience.

All good Coles ingredients mixed in a stainless panican.

Ingredients:

1 small tin of corn kernals
1 small tin of tuna
Half a shake bottle of pancake mix
A little extra water

Corn and tuna pancakes

Turn when the top starts to firm. If you can smell it, it's about to burn so turn it real quick.

Method

Shake the dry pancake mix a bit to loosen it up and tip into a suitable bowl.
Add the corn and tuna, water and all.
Add about 1/4 cup of extra water, a little at a time as you mix the pancake to a runny batter.
Pour into an oiled pan on medium heat.
Turn and cook the other side for a short time when the top first starts to firm.
Butter and roll, serving as finger food.

Serve as finger food, spread with butter and rolled.
